Title: Aunt Bill's Brown Candy

2 c Sugar 1 c Baking soda
1 c Buttermilk 3/4 c Margarine
1 t Vanilla 2 c Chopped nuts
Cook this in a microwave safe container which holds three times the amount
of ingredients, or it will boil over. Combine sugar, soda, buttermilk and
margarine, cover with plastic wrap; punch holes in wrap to allow steam to
escape.
Microwave on roast (70 percent) for 15 min. Stir and continue cooking on
roast (70 percent) for 13 to 15 min. until soft ball forms in cold water
(or 236 degrees on the candy thermometer). DO NOT PUT THERMOMETER IN
MICROWAVE. Add vanilla and beat with electric mixer until soft peaks form.
Watch closely. Stir in peanuts (or pecans) and pour into buttered 8 1/2X7
dish. Cool cut.

1 c Brown sugar 3 ea Eggs
5 c Flour 1 t Vanilla
1 c White sugar 1 c Butter
1 t Soda
Mix sugar, eggs, soda, vanilla, butter. Add flour. Let stand in
refigerator for 3 to 4 hrs. Pinch off small balls and press flat with
glass dipped in sugar. Bake at 350 until done.

2 c Sugar 4 c Flour
2 t Vanilla 1 c Butter or shortening
2 T Milk 2 ea Egg
Cream butter and sugar until fluffy. Add well beaten egg, vanilla
and milk. Add flour to this. Mix well. Let stand in refrigerator for
3 to 4 hrs. Take out and pinch off in small balls. Press small balls
flat with glass dipped in sugar. Bake at 350 until done.

4 c Sugar 3/4 c Cold water
3 ea Egg whites 1/2 c Roasted peanuts (pecans)
1 c Light corn syrup 1/4 t Salt
1 t Vanilla
Mix togeather sugar, corn syrup, water, and salt in a 1 1/2 quart casserole
dish. Cook in microwave for 22 min or until hard ball stage. Stir once
or twice while cooking. Beat egg whites until stiff in very large mixing
bowl. Pour hot mixture into beaten egg whites and beat about 12 min. Fold
in nuts and vanilla.

Title: Peanut Brittle

1/2 c Light corn syrup 1 c Peanuts
1 t Vanilla 1 t Baking soda
1 c Sugar 1/8 t Salt
1 T Butter
In 1 1/2 quart casserole stir togeather syrup, sugar, raw peanuts and salt.
Microwave at high power for 4 min. Stir and cook 4 min. more. Add butter
and vanilla to syrup mixture blending well. Microwave on high for 1 min.
Add baking soda and gently stir until light and foamy. Pour into sheet of
aluminum foil. Let cool 1 hr. When cool, break into small pieces.
Note: If roasted salted peanuts are used, add with butter and vanilla and
eliminate salt. Microwave on high for 1 min.

Title: Egg Custard Pie (Mary's)

4 ea Eggs 1 3/4 c Sugar
1/2 c Flour 2 c Milk
1 t Vanilla 1/2 c Butter
Blend eggs, add sugar and flour, add milk and vanilla. Put mixture in pie
pan then pour in melted butter. Bake at 325 for 40 to 45 min.

2 c Walnuts 1 1/2 c Sugar
1 t Cinnamon 1/4 t Allspice
1/2 c Water
Cook everything togeather until it reaches a soft ball stage (just like
fudge). Pour the mixture into a greased pan and spread flat. These are
ready to eat as soon as they cool enough that you don't burn yourself.

1 ea Egg white 2 c Pecans
1/4 c Sugar 1 T Cinnamon
Mix togeather egg white and pecans until sticky. Mix sugar and cinnamon
togeather. Spread over nuts until coated evenly. Spread on ungreased
baking sheet and bake at 300 for 30 minutes.
(of course, both candied walnuts and spiced pecans work just as well with
either kind of nuts. Even almonds, filberts, etc. can be substituted or
mixed with each other and they turn out equally delicious.

Title: CARMEL POP CORN (Cindy's)

1 c POP CORN 1/2 c Light corn syrup
1/2 c Oil 2 c BROWN SUGAR PACKED
1 c Butter 1 t Salt
6 c Nuts 1 t Bakin soda
Pop corn should be about 12 cups. Cook brown sugar, light corn syrup,
butter and salt over med. heat, stiring, until bubbley around edge. Cook
for 5 more minutes. Remove from heat stir in baking soda, will double in
size and be creamy. Pour over Popped corn mixing until covered. Bake in
uncovered pan for about 1 hour at 200, stiring every 15 minutes, watch
close if get to done will have burnt taste. Will not be as dark as Chacker
Jacks.

6 c FLOUR 3 T SUGAR
1 1/2 t SALT 1 pk YEAST
1 1/2 c WATER 1/2 c MILK
2 T BUTTER
Mix, in large bowl, 2 cups flour, sugar, salt, and dry yeast.
Combine water, milk, and butter in sauce pan. Heat to 120-130. Gradually
add to dry ingredients and 2 minutes. Add 1 cup flour - enough to make
matter thick. Beat at high speed 2 minuites. Stir in enough flour to make
soft dough. Knead until smooth and elastic. Place in greased bowl,
turning and grease top. Cover; let rise in warm place. Until doubled -
about 1 hour.
-Punch down. Divide in 1/2. Cover; let rest 15 minutes. Shape into loves
Place into greased 8 1/2 X 4 1/2 X 2 1/2 inch pans. Cover; let rise in
warm place, until double in bulk - about 1 hour.
Bake at 400 de. about 30 minutes - or until done. Remove from pans and
place on wire racks to cool.

1 ea PIE SHELL 1/3 c Finely grated pecans
1/3 c Light brown sugar 2 T Soft butter
1 ea Filling 1 ea # 2 can pumpkin pie filling
3 ea Eggs 1 t Pumpkin spice
1 c Sugar 1 T Flour
1/4 t Salt 1 1/2 c Milk
PREHEAT oven to 450.
Praline layer: Blend all ingredients is small bowl. Press gently into
bottom of pie shell, with back of spoon. (pecans, brown sugar, and butter)
Filling: Mix all ingredients (pie filling, eggs, flour, pumpkin spice,
salt, sugar and milk), pour into pie shell over praline layer, bake 10
minutes. Reduce oven temp. to 325. Bake 60-65 minutes or until filling
is set in center when pie is gently shaken. Cool thoroughly.

4 ea CLOVES GARLIC 1 1/2 c APPLE CIDER VINEGAR
1 t GROUND CUMIN 6 t SALT
4 t SUGAR 1 t GROUND OREGANO
In food processor or blender chop tomatoes, onions, peppers, and garlic, to
desired texture. Put in large kettle choped ingredients. Add remaining
ingredients, bring to a boil stirring occasionally. Lower heat, simmer
about 1 1/2 hours stirring often. Pour into sterilized jars and seal
tightly. Process in Hot water bath 10 min. Retighten lids.
